Answers by the Bakers of Edinburgh to the memorial for the Bakers of Glasgow about the assize of bread. The Glasgow bakers oppose a bill, drawn up by the Bakers of Edinburgh, to amend the existing law regulating the assize of bread. Under the present act bakers are required to divide the produce of their wheat into equal parts of fine and coarse flour, the fine flour to be used for baking Wheaten bread and the course for Household bread. The bill proposes to abolish this distinction, which has been abused by the bakers of Glasgow, by replacing the Wheaten and Household bread with a Standard Wheaten loaf.
